Homemade Pasta Carbonara

FullSizeRenderHomemade pasta carbonara… OMG. If you don’t like pasta carbonara its because. A.) you’ve never had it or B.) you’ve never had it made right!! Its a delicious blend of pasta, pancetta or some use bacon, cheese, egg, and love. Its such a simple pasta dish but it needs to be done correctly or disaster strikes and your eating bacon and scrambled egg pasta. which seems weirdly good… not what we’re going for. So first make the decision if your making your own spaghetti like I do or using a box of spaghetti. Its quite important because timing is everything. Your pasta needs to be finished when your pancetta is just finished cooking. Ill explain why later. If your making your own pasta. Give my homemade pasta a try. Here are the ingredients.

  • 1 lb of pasta
  • 8 oz of pancetta or like 4 thick cut pieces of bacon chopped
  • about a single serving of steamed peas (i use frozen)
  • 1/2 cup shredded parmesan and roman cheese or just parmesan
  • 2 egg yolks
  • 2 tbsp heavy cream
  • pepper
  • olive oil

First make your sauce. Combine your egg yolks, cream, and cheeses together. Remember freshly grated cheese cannot be beat but already grated from the store will work just fine too.


If your doing box pasta, drop your pasta when you start frying your pancetta or bacon. If you made homemade spaghetti, you’ll want to drop it about 2-3 minutes before your pancetta or bacon is done cooking. You need the pasta still hot to cook the sauce without scrambling the egg. also have your peas steamed and ready to go. I prefer the frozen steamer bags as they are really easy to use. Put the peas aside and add them last as you want them to still kinda “pop” when you eat them. Prepare your pancetta in a pan with a bit of olive oil and cook till crispy.


Once your pancetta is pretty much done which should be about the time your pasta is done. take the pan off the heat and immediately add both your noodles and then your sauce. With a pair of tongs mix everything all together constantly so the eggs don’t settle on the side of the pan and scramble. If done right it will turn into a creamy delicious sauce. Add your peas and some freshly cracked black pepper and done!! This really is an overall fast and delicious pasta dish that people sometimes forget about. When garnishing some fresh grated parm or a good crack of black pepper is all you need. This is one dish that will have everyone coming back for more!
